There are foundries that make gamelan instruments in various villages - ask a driver to take you to one that also has a shop front. I haven't tried to bring any back. The prices of good instruments were pretty high as I recall.
Michael Tenzer's book "Balinese Music" has a good section on the making of instruments at the foundry of Pande Made Gableran in Blahbatuh village. Not sure if Gableran is still around but the foundry is probably still there, which might be a good starting point.
