Having gone on the Bali Baik Tour last Dec with my kids who are a little older than yours (12 & 13) I would imagine your 7 & 9 year olds would have no problem with it. Wayan conducted the tour at a slow pace/ your own pace along long, quiet streets - mostly downhill. It was a great day out with plenty of stops & ice cold water provided often.
There is a small 4 wheel drive that follows the bike riders at all times (carrying essentials like eskies of icey water). Your kids could always ride in the car if they tired of riding, as did 1 or 2 riders toward the end of our tour.
Perhaps voice your concerns to Wayan, the owner (& father of young kids) when booking. Am sure he'll accomodate you well.
