You don't need to book ahead, in fact probably better if you "look [and negotiate] before you buy". As others have said, most of Candi Dasa no longer has much beach, but there's a nice, clean, safe white sand beach just a few minutes walk past Legends Cafe, at the Amlapura end of Candi Dasa main street. This beach is also OK for snorkeling on a live reef with plenty of fish.
The beach stretches from Shangrila [not budget, unless you are lucky enough to get one of their special offers to promote their timeshare, but worth a look]. At the other end of the beach is Resor Prima [used to be budget, but has been upgraded], but you can try your luck on price. Past Resor Prima is Puri Oka [budget], or you may see something else down there that you like.
A quiet farming/fishing village, with a nice cheap little warung and one shop, but still handy to Candi Dasa's shops, restaurants and money changers etc.
