Everyones idea of the perfect wedding is different, so my advice is just one opinion.
I would say though that when you are thinking about photograhers, go for an expat. There are plenty of them in Bali. We had two local photographers who took some nice shots, but also alot of bad ones, such as a group shot where people are standing directly behind others. To me a good photographer should have rectified that before he took the shot. And pictures with heads cut off, and only one picture of the cake, and he took it too close so the edges are cut off.
Also for your hair and make-up. We used an expat because the local stylist was busy on the day. It cost $200USD for Kris' hair and make up, but it was worth every penny! I can get you the name if required.
Flowers depend on what sort you are after. If you want something like frangipanis they are fairly cheap to get someone to organise. But if you want something that is not native to Bali (ie Oriental lillies) then they will want to charge you an arm and a leg for them.
We got our rings and clothes at home and took them with us. Kris didn't want to be looking when we only had 3 days before the wedding after we arrived.
Just take the heat into consideration when thinking about your attire. I wore a light cotton white suit with an opened neck shirt and sweated alot until we changed into our casual gear once the formalities were over.
