Might work out cheaper to cancel your Bali flights (both legs), and just book Phuket to Denpasar, then one way Denpasar to Melb on Jetstar. One way on Garuda is usually not much cheaper than return.
Your dates are getting close to school holidays, though, so prices are likely to be high. May be cheapest to do what sofe says and come back to Melb. Just remember to do your in-flight exercises!
