A good plan would be to stay in Ubud for a few nights. There is a monkey forset there & you could quite easily do Munduk, Banjar & Tegallalang in one day. The bike ride starts from near Kintamani so you get to see Gunung Batur. This is about 1/2 a day I believe so you would have some shopping time at the markets in Ubud before driving back down the mountains to Tanah Lot for the sunset.
Waterbom is in Kuta/Tuban so you can do this when you return.
