We had the same flight I am guessing on 14th Jan Bris/Melb/Syd/Denp...And had the waitover in Sydney.As our bags had been checked through to Denpasar from Melb we only had light hand luggage so we found it easy to leave the airport and headed into Circular Key and did the Rocks Area,Opera House,Circular Quay and had lunch etc. The train station is directly under the terminal and is easy acess.Cost us $15 return each. Just make sure you are back 2hrs prior to the flight and that you return to the International Terminal to checkin.
Ours was also a Sunday flight and you will find the Markets are on in the Rocks area and lots of street entertainment happening around Circular Quay.
Many on our flight we noticed left the airport and did similar.Officially passengers are not ment to but unofficially it is OK as long as you leave plenty of time to get back.The train trip took us approx 20mins. Just get a time table when you buy your train tickets. Have fun. Toni
