If you arrive in Sydney having flown from Melbourne domestic, then you will have to transfer to the International terminal, so wont matter what you do or where you go between arriving in Syd and changing terminals. Not sure what will happen to your luggage when you check in in Melbourne. Not sure if it would be checked in for Denpasar, or whether you would have to collect your luggage in Syd and take it over to the International terminal yourself. Would be difficult to sightsee if you had your luggage with you...
