I have stayed at Ananda Cottages, which is quite a nice budget hotel. It has rice paddies out the back, past the pool. Nice food there.
I stayed in a fan cooled upstairs room.
The hotel is about a few kms out of Ubud, past Hotel Tjamphuan (also a nice hotel- river views rather than rice paddies). It's fine walking into Ubud (downhill) but a bit of a struggle on the trip back (for me anyway). LOL.
Another place you could look at is Klub Kokos - it is surrounded by rice paddies & reasonably priced too.
