I've been to a couple of hundred weddings in Bali as a co-ordinator and may be able to give you some suggestions. It really depends on what your tastes are, how many people are coming, what your budget is, etc. That's where a wedding planner is invaluable - you can get up to date information on different locations without the hassle of ringing or writing around - and you know that the truth will be told because they are not trying to sell their own property! The best co-ordinator in my estimation is Bali Weddings International. You could also have a look at the website below which gives some very good information about weddings in Bali.
