Visa on Arrival can be quick or slow depending on the number of flights arriving at the same time as you.
Ubud accommodation - would also recommend Ubud Village, great location, central to most things.
Re vegetarian food - my hubby is a vegetarian and he didn't have any trouble eating out. Aromas is pure vegetarian, even the cakes, which he just loved. Indian restaurants go great veg food if you like curries. Otherwise he ate Nasi Goreng just asked for it to be veg, no fish, chicken, egg, oyster sauce and it was never a problem.
