Tidak refers to a verb and means not, but often a more polite answer in belum which means 'not yet' and is a polite answer to have you eaten, do you want to do something, or are you married - much better than tidak which is too harsh. For no thankyou just say terima kssih like our 'no thanks' without the no.
Bukan always refers to a noun - a thing as in are you an Australian, bukan saya orang New Zealand - I am aNew Zealander.
Generally try to avoid saying No, try to be more polite but still clear. Lain kali - another time - is also a good way of avoiding something now
