I like to book a few days in a lead in hotel where I know I'll be happy and spend the rest of the holiday checking out other hotels in other parts of Bali and negotiating my own deals when I find somewhere I like. That way I get to see other places and find hotels which I otherwise wouldn't know existed.
There are a number of budget to medium hotels where I know I'll be OK for 3 or 4 days. This way I don't find myself stuck with a situation I don't want.
