I haven't done it this time of year, but I have done this a few times in the past (including 'high season') and have never had any problems finding somewhere to stay. Although Bali is picking up, it isn't busy and I am sure that you will be fine.
Travelling aroyund with no itinerary and with nothing booked is definitely the best way to do it in my opinion - you can stay in places that you like as long as you like, and move on when you have had enough... and there is also the added excitement!
