I went here in early Feb this year. The dance started at 6pm and the sunset during the dance, incredible. The sunset always depends on the weather, cloudy or not. The monkey dance ends with fire. I thouroughly enjoyed it. There is a terrific restaurant on Jalan Uluwatu No 2003, Cafe Uluwatu Inday, on the left not that far from Uluwatu. It boasts the coldest bintang on the island, and it turned out to be no idle boast. I went with Balinese friends who had taken me to see the monkey dance, yes, as usual, friends/relative ran the restaurant. The owners name is Wayan Mertiasa, 081 6473 3938. Food was great and price reasonable. Thoroughly recommend it.
