You cannot work in Bali without the proper visa - Kitas - and these are a few thousand dollars. I'm pretty sure that to get a Kitas, you need to be sponsored by a company. Without the visa, you are unable to work. You can sit in the bar/restaurant and watch what is going on, but legally you're not even allowed to pick up a plate. I'd get the lease checked out by a solicitor here (I'm taking it you are in Australia) and also there. We had our Balinese lease checked here and our solicitor (who had no knowledge of Indo law) just steered us in the right direction with some obvious questions to ask. We then dealt with an Australian solicitor living and working in Bali.
Given that you could sort all of these things out and that you were all healthy and happy to take on the adventure and prepared to lose your money (can happen), why not? Email me if I can offer any other advice
