There is a thing you can get at the chemist or at the news agent at the airport called "Ear Planes" and they look like little blue rubber Xmas Trees. The go in each ear like an ear plug and stop any build up of pressure when taking off or landing. They are really fantastic and my son and I have used them on every flight for the last 8 years. No problems with sore ears at all. Once you have reached crusing altitude you can take them out and then you put them back in once you are told you will be landing. These might be easier for a baby than trying to get them to suck on a bottle or something.
