I took my mother last June, she is very much like your mum and does not like the heat, June was lovely, and so is July, my husband found it to cool in the water to swim, you can walk without getting hot and sweaty.
I found May much hotter than June, So I believe your mother will love it, my mother is 78, and had a ball.
