try and eat at the busier carts - for instance outside the Inna Hotel on Kuta Beach. Lots of people eat there every day, so not only a good sign of good food, but also means high turnover of fresh food. Start by eating plainer foods like rice or noodles in small quantities then go from there. I also don't eat much meat over there and mainly stick to seafood, which is caught locally and also has a higher turnover. I east Asian food with plenty of chilli at home all the time so my tummy is used to it. Once you get used to the real stuff the restaurant food seems bland in comparison.
