You could try these:
J. Stephen Lansing "The Balinese". Small book, general coverage of Balinese culture including religion.
Hildred Geertz "The Life of a Balinese Temple" - Excellent. Looks at the history of a single temple in the village of Batuan and the Balinese people who worship there. If you are interested in what Balinese statues and designs mean, this is a very good source. Also covers recent years and the impact of tourism. Published in 2004.
Thomas A. Reuter "Custodians of the Sacred Mountains". This book looks at the Bali Aga, the original Balinese. Lots about early religion (Hindu and pre-Hindu) that you would find interesting. Published in 2002.
Jane Belo "Bali: Rangda and Barong". An oldie (published in 1949) but a goodie.
There are lots of others, but these might get you started.
