I always buy a couple of cook books in that book store outside Matahari's, and here is one tested by my good friend at work.
Spicy vegetable and Coconut Salad (Urap)
250g (3 cups) bean sprouts, tails removed, washed and drained
100g (1 cup) sliced green beans
150g (1 cup) shredded cabbage
150g (2 cups) green leafy vegetables such as bok choy or choy sum
150g (2 cups) kangkong
Coconut Dressing
4 red chillies, sliced
3 cloves garlic
2 teaspoons fresh galangal or ginger, grated
1/2 teaspoon ground coriander seeds
3 kaffir lime leaves, sliced
1 tbs finely chopped palm sugar
1 tsp salt
200g (2 cups) rated fresh coconet
1) Process all coconut dressing ingredients except the coconut in a blender. Transer to a bowl and stir in coconut. Put bowl in a steamer, cover and cook over boiling water for 30 minutes. Transfer to a wide container and set aside to cool.
2) Blanch the vegetables separately. Drain all the vegetables and place in a large bowl. Add the coconut dressing and toss.
