Depends on how much extra you intend taking in as to whether you will be asked for the obligatory donation. I always take 2 bottles and declare them and have not had a problem. It would seem customs officers are more interested in spirits than wine / champers.
There is no real amount they will try to charge you for excess alcohol, just remember when you get taken to the little room to discuss your problem, be very pleasant and bargain hard...I think someone posted on here recently that they once took a case of champagne in and paid $50 to the customs officer...not bad for an entire case of champagne really.
