Sorry I can't give you a comparison with the hotels you mention as I have never stopped at the hotels in Legian that you mention.
You will find shopping much quieter in Sanur, there's not a lot of DVD stores. The Sindhu Beach market is quite good but not as big as Kuta or Legian. Tootsies and Jennie's stalls 27 and 28 (I think) check the archives. Have good fixed prices. They used to sell DVDs but the police started ripping them off so they stopped selling them. I can't help you with tailors as we haven't used tailors in Sanur.
We love Donald's cafe on the Beach, fantastic service and prices. Have been frequenting there for 3 years. They don't have happy hour but their Bintangs are very cheap. The Bonsai was quite good when we went there last year.
