they can be changed anywhere, rates v similar all over - personally for security I would rather change through the hotel or airport , as the diff between that and the street rate is miniscule , it only looks a lot in rupiah. Then use ATms with Visa ( with cirrus logo)
If you have a load of cash and keep it in the safe at reception it can be a bit embarrassing to sort it out at the counter with ppl watching, so I usually sort into numbered envelopes with say $100 in each, then just take out one at a time
