We have stayed at the Dynasty 12 times in the last 9 years and used the safe and have even left jewellery and other valuables in our room when we have gone out and have never had anything gone missing even small money that we have left on the bathroom bench. It is even more surprising that a staff member would do this and over 90% of the staff (especially the room staff) have been with the hotel for 10+ years and even a hint that there would be a problem could cost them a job especially as the general manager is English and is really strict on this sort of thing.
We did however hear of an incident where someone had a ground floor room and didn't lock the balcony(?) door and the people next to them totally cleaned out the room but were caught before leaving the hotel.
It is a very sad end to a great holiday and I hope that your insurance company are able to help (don't forget to keep a copy of your police report). Don't hold it against the hotel - Dynasty is great.
