If you are coming from UK, the best solution is buying a ticket uk-bangkok-bali with the same airline. In this way they consider it as a unique flight (like if you were directly going to bali with stopover in bkk) and the cost is little; then you just ask them to stop in bkk for more days.
To make an example, I will be flying tomorrow with Thai from Milano to Denpasar (with stopover in BKK) and my return ticket cost 1.250 euro.
The return ticket just to go to Bangkok, with same dates and flights, costs 1.100 euro.
However if you book separately the two flights Bangkok - Bali costs about 500 euro.
