You've just lost around Rp500,000 (nearly $70) by getting a bad exchange rate at home. Just take your Aussie dollars to Bali and exchange them there!
To do all the things you want, you'd need to budget anything from AUD%50-100 per day each person. I'd lean toward the $100/day figure and be happy when you bring extra home.
I always budget $100 a day and usually come home with a few hundred left over, and that was always with buying sarongs and jewellery for my market stall and sterling silver beads for my jewellery making. But I'm not into waterslides or elephants, so I skip that kinda thing. I do hire a driver and do various day trips though.
