Sorry for the funny terms. I'm a former chef & the technical cooking terms just stick in my head. Yes, forcemeat = stuffing, and a chafing dish is a big metal dish with some sort of warming device underneath to keep the food warm. In other words, food wasn't cooked to order (damn, another cooking term!) but prepared ahead & held warm as needed.
