It is not illegal to take more than 1 litre of alcohol into Bali - you just have to declare it and pay the duty!
You need to have kept the receipt for the alcohol as proof of the value. They never seem to be able to show you exactly what the rate of duty is and the embassy in Australia couldn't even tell me. I typically give them the value of the alcohol as "duty".
In 16 trips to Bali the worst I ever faired was paying AU$50 so that I could take a whole carton of champagne in.
