The quieter places in Bali are away from the southern tourist areas of course. That means at least Ubud but better still Candi Dasa out on the east coast, Lovina/Singaraja in the north or Negara/Gilimanuk in the west.
If you are staying in the Kuta-Nusa-Sanur areas you can go anywhere on the island and return to your hotel in a day, although sometimes you should get an early start and plan for a late dinner so that you have time to stop and see things. I strungly suggest that you go to your local map shop and get a map of Bali. It will give you a lot of information and also give you a bit of confiderce when you get there because you'll have some familiarity with the island.
