Whats up Fiona! Make sure the establishment is clean,if where the customers are is dirty imagine what the back looks like where you can't see.Everything should also be done right in front of you such as opening new packages containg needles and such. They should always talk to you about the do's and don'ts of a new tatt, even if you've heard it before.Ask to see some of their work,a genuine tatt artist will have a book of his or her work, polaroids and such, word of mouth is always good to if you can find someone who has been there.I have 5 myself and these are some of the things I look for when I get them done in Canada where I'm from ,good luck!
