I have travelled to Bali 6 times and except for the first time have only ever taken cash.
If you don't have a safe in your room get a deposit box at the hotel,
that way you only get out what you want to change up.
If you are worried about not having enough or taking to much cash anither alternative is to put money on a credit card and simply withdraw the other end- there are charges and they vary from bank to bank, but there are also charges with Travellers Chqs
