It took a few attempts before I did some research and realised I should be using rice flour and coconut milk instead of wheat flour and dairy milk. (I tried to reduce the calories a bit as well with my recipe). My recipe is for the thin crepe-like pancakes, not the centimetre-thick pikelet-type ones. To make enough for one big eater or two smaller eaters, this is what I do. Into a bowl I put 3 tablespoons of rice flour, two teaspoons of sugar (or Splenda powder), a big pinch of salt, one egg, and one-third of a cup of lite coconut milk. Blend together and add two teaspoons of melted butter, Blend again. Thinly slice one small to medium banana into the batter. Heat a pan and butter lightly and pour some of the mixture into the pan and poke any slices of banana that have stacked themselves out into a single layer. (I usually make four pancakes from this mixture). When you think it is ready, turn it over (may need two spatulas or halve the pancake and do it in sections as it can be rather thin). Repeat till all mixture has been cooked. Drizzle with maple syrup, runny honey or add a scoop of vanilla ice cream and some fresh or tinned fruit. Of course you can use regular coconut milk and double the recipe if you want.
