As for the horse riding - it seems pretty expensive even there. I have grave concerns about how the animals are treated after seeing the Kuta ponies standing in the sun without shade or water all day.
Snorkelling would obviously depend on the location. As you would probably be aware some beaches in Bali are trechorous.... and other spots would be like a flat pool....
