many people in Bali live simply. Be aware of cultural differences (read about the culture and religion so you don't offend anyone).
I have stayed in a village with friends. It was a great experience even though I didn't sleep for 4 days (roosters lived next to my wall).
I would take some gifts of food for the family upon arrival. Rice, sugar, etc. Anything is gratefully accepted.
Staying with a family certainly helps with polishing your Indonesian. I did some teaching and was there by myself with 45 kids with little English and my limited Indonesian. I really enjoyed it even though I was a bit overwhelmed at the time.
