If you can get flights during school holidays you're doing well. I'd suggest getting out to agents and booking yesterday... and if you do get a seat, you probably won't get the exact dates you wanted. You're probably way too late for that.
When I was booking (from Sydney) I was told that nearly all flights were full for school holidays and that the hotel I wanted was also full.
