Go to the tourist information place opposite Ubud Palace and get a list of all the dance shows on - there are some on every night - the Kecak is very special and also the shows at the Ubud Palace are excellent. Try the shadow puppet show as well. Eat suckling pig for lunch in the tiny place next to Ubud Palace and if you are after culture be sure to visit the Neka Gallery just outside town - it is a really excellent introduction to the different art styles of Bali - well laid out and well labelled.
The only downside in Ubud is the constant hassle for transport - most places are within walking distance of the centre but if you do need transport - haggle hard!! Ubud, thankfully, is NOTHING like Kuta - I spent three hours in Kuta and would never go back!
