we have done a couple of Casa Luna courses and it is cheaper to book directly with Casa Luna. If you stay at their hotel Honeymoon Guesthouse you also get a further 10% off the price.
All the food we cooked was traditional Balinese food and very nice. You also get a lovely morning tea if you do the market tour. Both days that I did were great.
It is run by Janet De Neefe (an aussie girl married to a Balinese) and she has published an interesting book called Fragrant Rice. It is not a bad read.....

I have also read in the latest Lonely Planet of another one in Ubud. It is at Bumbu Restaurant in Jalan Suweta Ubud and they offer balinese cooking course with Indian cuisine also a possibility (HHHMM) Courses cost RP120,000 for first day and RP 80,000 thereafter. Bumbu Restaurant seems to either be next door or part of the best Bubi Guling place in Ubud.

Will try this one in September and supply feed back.

Others listed in Lonely Planet:
Bumbu Bali in Tanjung Benow, Heinz von Holzen, one time Hyatt chef and author of The Food of Bali. ( I have heard wonderful reports on this one)

The Serai Candi Dasa sounds good but a bit pricey, you can email for more info' seraimanggis@ghmhotels.com

Sacred Mountain Sanctuary, www.sacredmountainbali.com

Trio Pesona Perkasa Tours and Travel, www.balagency.com offer 4wd cooking tours???trip to Gianyar market, lunch time cooking at Muncan and a tour of Sideman area for US$49-00pp

I found another one that sounds interesting in Ubud.

The Secret Garden cooking School

Take your next trip to Bali to another dimension by entering the mysterious & fascinating world of traditional Balinese cuisine. At The Secret Garden's cooking School, you'll become familiar with the foods that are part of ritual and everyday life on this magical island.

Both our one and two-day hands-on, intensive courses will give you a deep understanding and appreciation of this unique cuisine. Under the tutelage of culinary aficionado Ni Luh Sudiani, you'll learn to identify, prepare and blend the exotic spices & ingredients that are the soul of Balinese cooking. When you return home you will be able to replicate a full Balinese banquet, from appetizers to dessert, to tantalize the senses of your friends and family.

The School is conducted in our beautiful restaurant balé area, set amongst our tranquil tropical gardens and ponds - a most appropriate setting to prepare a feast for the Gods. Small, intimate classes of no more than 6 people ensure plenty of personal attention and hands-on practice.

Hope this is of some use to you
