There are several performances on every night of the week in Ubud and surroundings and the 'tourist information office' has a list of all of them right opposite Ubud Palace - they also have a list of forthcoming cremations and will arrange transport to them if you wish (but make sure the driver speaks English and can tell you what is happening - thats a mistake we made!!)We saw several dance and shadow puppet performances there a few weeks ago and they were all of very high quality
I really doubt you need to prebook spa treatments, so why dont you just get to Ubud and go with the flow when you get there!
A great place to stay is Komaneka resort right in the middle of Ubud, pricey but really cool -
