If you got quoted on airfare without accomodation it's often more expensive than getting a package deal with 4 or 7 nights included. They have different classes to book the seats under and it's much cheaper to go with a package deal.
Go back to Flight Centre (or any travel agent) and don't ask for just an airfare quote - get them to quote the total stay including one or 2 hotels... you'll probably find it's still around the $1200-ish mark with accomodation included - depending where you decide to stay.
