Uluwatu is lovely and a spectacular location, but a Tanah Lot sunset is something everyone should see at least once in their life.
I've been twice and never seen any snakes. I believe there are some sea snakes in the waters around the temple, but I've never tried to cross so I've never seen if it's true or not.
Depending when you arrive, quite often the market is very busy so it's easy to walk straight through without having to stop and look at the stalls (if you don't want to) and just go straight down to the kiosks to find a table to sit at.
