Day trips and activity advice??

Was just wondering if it is best to pre-book day trips tours and various activities before we go to bali or is it best to wait until we get there...???
My wife and I are both Bali virgins and are heading over for the first time on the 20th of May for 8 nights.....
Would love some hints and tips.....
