My advice is that you should really do a lot of research into the sorts of places you might want to see whilst in Bali before you arrive. Many of the people on the forum go to similar places, but there is the odd JBR that will give information about some not so often visited places that sound excellent!
Also, travel books such as the lonely planet offer advice on some good places that are not so crowded with tourists. Pick some of these places and then just ask a driver to take you for the day.
My advice is to stay away from the places that you are always offered by the drivers themselves such as the "vulcano".
