250g egg noodles, 100g chicken, 3 small red shallots, 1 small leek, 3 cloves garlic, 2 large red chillies, 1/2 med. carrott (cut julienne style), 125g cabbage, 125g choi sum, 4 tbs oil, 1/4 cup chicken stock, 2 tps fish sauce, 3 tps soy sauce, 1 Tbs kecap manis (a bit like sweet soy sauce), 2 tps tomato sauce, salt & pepper to taste. Garnish with fried shallotts, sliced cucumber, sliced tomato. Bascially cook noodles & drain. Heat oil & cook chicken in wok, then all other ingredients in order.
