My wife and I are in our mid-seventies and we go to Bali every year. I think you should go for a ground floor room. There are many suitable places in Sanur and Ubud, a travel agent should advise you about prices and standards. Sanur is flat and the footpaths are reasonably good, but Kuta and Legian have up and down footpaths with broken covers and traps everywhere for the unwary. On the other hand Ubud in parts is quite steep and has up and down footpaths. I think your senior should enjoy herself, as with age we let our bodies tell us when enough is enough.
