You must have stayed at the Bora Bora Hotel... Nice place. We stayed at the Le Merdien in Bora Bora a couple of years ago.
For Bali, the Four Seasons in Ubud is a wonderful place in a perfect setting.
What we have done for the last couple of trips is stay at a villa managed by BaliVillas.com. You get everything you want (pool, privacy, luxury) along with a cook, car/driver who will take you anywhere, and a pool/houseboy.
The main advantage as I see it, is you are not subject to the 20% hotel tax, you have your own dedicated staff, your meals are prepared exactly as you want them with the cook buying the food at local market prices, laundry is done everyday and you are pampered, for a price less than the Four Seasons.
