It's this wee fekker that climbs the coffee bushes at night, chews on the beans for a while, swallows them whole, then eventually pases them through the body so that, in the morning, the Balinese coffee grower gathers these beans in the knowledge that these are the most select beans of the crop.As with pigs being kept for truffle snuffing in France, so the epicurian Balinese coffee growers keep the cuscus for this purpose.
Look for the label; Kopi Tabrakan / Kopi Cuscus, the most wholesome. (did I say that?)
