Many times I have done the following.
Hire a driver Rp70,000 - Rp100,000.
Get the driver to pick you up at you hotel in Kuta/Legian at approx 4pm. Fist go to the Temple at Ulu, spend 30 minutes looking around the temple,feeding the monkeys etc. then drive to the top of the cliff where the surfers go, there is a cafe there now that you can sit and relax and have a drink, walk down to the beach past all of the stalls etc. Go for a swim if you like. After this come back to Jimbaryn Bay for a sunset seafood meal on the beach. The driver will probably want to take you to one of his friends restaraunts, however just ask him to drop you off and go for a walk and look at all the seafood cafes and make your own decision. The driver will wait while you have dinner then drive you back to your hotel. To arrange a driver just walk out on the street at Kuta/Legian and tell them what you want to do and then bargain. This trip for between 4pm and 7.30-8.00, will cost you no more than Rp100,000. You will also have to pay a small cost at Ulu to park. only a couple of thousand Rup.

I would also take a driver another day to Tanah Lot and sit on the cliff and have drinks. There are many cafes, tables and chairs set up there. Leave about 4pm so that you can look around at the stalls etc. Approx. the same cost as above. Tanah Lot is in the opposite direction of Ulu. Kuta ia about in the middle of the two.
