CHEAT'S MIE GORENG

This takes about 15 minutes prep time and 4-5 mins cooking time [max].
Read thru before doing as I may have typed out of sequence.

Buy Indo Noodles Mi Goreng –, they are like 2 minute noodles, come with seasonings and prepare in same way [directions on pack]. For 2 people do at least 2 packets or more if you like. Drain and set aside, once you have chopped up herbs etc.

Buy the following and prepare as follows :

1 cooked chicken [chop up the breast for white meat]
peeled cooked shrimps [thawed] as many as you like
half red Spanish onion - chopped
minced garlic – half teaspoon [cheat from a jar]
spring onion - finely chopped small amount
fresh basil - torn or chopped
mint - chopped
coriander
chillies- finely chopped [added to your liking]
unsalted peanuts – small amount
kecap manis [sweet soy sauce] – you can add to your liking with prepared dish
2 eggs – see below for 2 options
prawn crackers [from local Chinese takeaway] or cook your own.

In a separate bowl or frypan –
Either fry 2 eggs and serve on top of mie goring, OR in a bowl beat 2 eggs and microwave till cooked, then slice up and add to other wok ingredients.

In a wok or saucepan:

Drizzle small amount of olive oil [any oil will do, peanut, canola etc].
When hot put in minced garlic, ½ chopped Spanish onion, diced chillies, chopped basil, unsalted peanuts and a little kecap manis. Stirfy for a minute, add chicken and shrimps.
Now add your chopped microwaved eggs [if you go that way]
And the drained noodles and drizzle over more kecap manis, the spring onion, some chopped mint and stir for a minute or less then remove and serve. Put freshly chopped coriander on top, a little chopped fresh basil and fried egg if you have chosen that, along with a prawn cracker or two. I also like to add some more fresh finely chopped chillie.

I almost 100% guarantee you wont be disappointed.....hope you enjoy if you try.
