Like many things in life, a matter of personal choice.
The only place I have stayed in Ubud is Tjampuhan Hotel. I've been there several times and will be there again in August. For atmosphere, scenery, history and location in the side of a river gorge, possibly unique and only a few minutes very interesting walk from the centre of Ubud.
Many websites, just type in "Hotel Tjampuhan".
For a night out, you may like Jazz Cafe.
